Coconut Cake













Ingredients:
1/2 cup almond meal or blanched almond flour
1⁄2 cup coconut flour
1⁄2 cup shredded coconut

1 lemon zest
1 tsp baking soda

1/2 tsp salt
4  eggs
1⁄2 cup coconut nectar or honey
1⁄2 cup coconut oil 

2 Tbsp fresh lemon juice
2 tsp vanilla extract
1 cup coconut milk



Directions:
Grease a 8’’ round pan with or cover with parchment paper
Preheat oven at 325F
Mix all dry ingredients, shredded coconut and lemon zest, set aside.
Whisk eggs with vanilla extract, lemon extract, coconut oil, honey, lemon juice and coconut milk.
Add flour mix to liquid mix.
Pour in pan and bake at 325F for about 45 minutes or until toothpick comes out clean.
Cool completely.
