Apple cinnamon cake

This cake is super moist, light and delicious!
                                                                                       Ingredients:
1 1/2 cup Almond meal
1/4 cup Coconut flour
1/4 tsp Sea salt
2 tsp Baking soda
1 Tbsp Cinnamon
4 Apples
1/2 cup Honey
4 Eggs
1 Tbsp Lemon juice
1 Tbsp Vanilla extract
1 cup Coconut milk
1/4 cup Coconut oil melted
1/2 cup Walnuts





Directions:
Preheat oven at 350F.  Grease a 8'x4' round cake pan.
Peel apples and cut into small pieces, put them into a bowl and add 1 tsp of cinnamon, 1 Tbsp of honey, 1 tsp of vanilla extract and 1 Tbsp of lemon juice, mix everything and set aside.
In another bowl mix all dry ingredients and walnuts, set aside.
In another bowl whip together eggs, vanilla extract, coconut oil, coconut milk, lemon juice and honey.
Add apples to dry ingredients then add the liquid mixture and mix throughly.
Pour batter into prepared pan and bake at 350F for 35-40 minutes.
Cool completely before remove from pan.

  1. Probably a dumb question - is almond meal the same thing as almond flour? I'm so not used to all this paleo-ized baking yet!

    1. I have used both meal and flour, and prefer flour, better for baking stuff.

  2. Essentially yes, almond meal and flour are the same thing, the only difference is that the flour is a finer grind of almonds.

    1. I never tried to freeze this cake before, I think you can do so by wrapping the cake with plastic wrap and aluminum foil before freezing it. When you need the cake just let defrost it at room temperature.

  4. This was Delish! I made a coconut whipped cream with cinnamon and vanilla for on top. It was perfect!

  5. Hi, I made this last weekend, it was good but over flowed my 9 inch round pan, and was very wet in the middle... Any suggestions???

  6. Hi Kris, did you use almond flour or meal? Usually the flour is finer and lighter then the meal so you'll need to reduce the liquid in the recipe. Try to reduce the coconut milk to 2/3 cup or even less if you think the batter is too runny. Hope it helps!

    1. Hi, actually I ground my own from raw almonds as I live in a very rural area(upper michigan) and can not find almond flour anywhere... I will try that, thanks...:)
